Kwek Kwek - how to cook quickly

KWEK KWEK means "Quack Quack".
Because the kind of egg which is generally used for cooking this orange food were duck eggs. Then there's the smaller variation called "Tokneneng" - which uses quail eggs. In this really easy recipe I used chicken eggs and they are readily available just anywhere. I cooked these in a hurry.

Ingredients:
- EGGS
- all purpose flour
- water
- cooking oil for frying
- orange food colour
- salt, pepper

START:
1. Boil the eggs: first the water (just enough so the eggs' shells aren't surfacing); when the water starts to boil add the eggs & let boil for 10 minutes, 12 minutes if you want your eggs to get  harder. If overcooked the yolk becomes GREEN.

       Peel the eggs: After the boiling bath, immediately place the eggs in cold water before peeling - this will make it easier. 



2. Make the orange batter: 
For every cup of flour, use 1/2 cup of water. Mix together the flour, water, a dash of salt, a pinch of pepper, a liitle food colouring (you can use blue or green but it won't look as appetizing, i've tried it)

3. Frying:
You will need some dry flour. Dredge the eggs into dry flour 

then into the batter - completely cover them.  


Then drop onto the hot cooking oil. It should be deep fried

After a minute or so, it is done. Just llike that. Goes great with vinegar.
